Organizado por el Comit\u00e9 de Fomento a la Gastronom\u00eda de Quintana Roo, el evento reunir\u00e1 la riqueza gastron\u00f3mica de los 12 destinos del Caribe Mexicano en un solo espacio, se dio a conocer en conferencia de prensa.<br><br>\u00abProcuramos que sea un evento no solamente accesible, sino tambi\u00e9n asequible y esto es muy interesante porque lo pudimos constatar en Cozumel, donde muchos de estos restaurantes, digamos, no siempre est\u00e1n tan disponibles\u2026 se convierte en la posibilidad de que toda la poblaci\u00f3n en general pueda acceder a este tipo de oferta gastron\u00f3mica, lo cual s\u00ed hemos cuidado y me parece que tambi\u00e9n hay mucha conciencia de parte de los expositores, quienes no lo ven como un tema de negocio, sino como esta ventana o este escaparate para poder mostrar la diversidad gastron\u00f3mica que tiene el estado\u00bb, resalt\u00f3 Andr\u00e9s Aguilar Becerril, subsecretario de turismo estatal.<br><br>La presentaci\u00f3n oficial del festival se realiz\u00f3 en el restaurante Aut\u00f3ctona de Canc\u00fan, encabezada por la chef Jasibe Barrientos, anfitriona del evento, quien destac\u00f3 que Quintana Roo cuenta con una identidad gastron\u00f3mica propia, sustentada en una herencia ancestral que combina sabores del mar y la selva. Se\u00f1al\u00f3 que el objetivo del festival es posicionar al estado como un destino tur\u00edstico gastron\u00f3mico, mostrando t\u00e9cnicas, ingredientes y platillos tradicionales de la regi\u00f3n.<br><br>El chef Benjam\u00edn Nava, integrante del comit\u00e9, explic\u00f3 que el ingrediente invitado de esta edici\u00f3n ser\u00e1 el coco, seleccionado por su arraigo hist\u00f3rico en Cozumel y la Riviera Maya. Este fruto ser\u00e1 protagonista en propuestas dulces, saladas y bebidas, adem\u00e1s de actividades acad\u00e9micas enfocadas en su aprovechamiento integral.<br><br>El festival contar\u00e1 con cerca de 27 propuestas gastron\u00f3micas, superando ediciones anteriores, as\u00ed como la participaci\u00f3n de cocineras tradicionales acreditadas, restaurantes reconocidos en la Gu\u00eda Michelin y establecimientos incluidos entre los 250 mejores restaurantes de M\u00e9xico. <br><br>Tambi\u00e9n se instalar\u00e1n pabellones como la Kerm\u00e9s del Caribe Mexicano y el Tianguis del Mayab, con productores locales; el pabell\u00f3n Hecho en Quintana Roo, con m\u00e1s de 50 artesanos, y una amplia cartelera cultural vinculada al Carnaval.
